success with salmon


This broiled salmon was so great, fast and made for easy clean up! Although I love black and bleu salmon, the mustard topping gave the salmon the crispiness I love without all the calories.  Love it.

  1. Preheat oven to broil.  Put aluminum foil over a baking sheet.
  2. Pat salmon dry and sprinkle with salt and pepper.
  3. Broil for 2 minutes.
  4. Add the mustard mixture on top and broil for 5 more minutes.
mustard mixture:
2 T. dijon mustard
2 T. brown spicy or whole grain mustard
1 T. white wine
1 T. olive oil
1 garlic clove, minced
Add rosemary, thyme or dill if you have it.
