our favorite zucchini recipe

Alissa's Zucchini and Chocolate Chip Muffins

1/2 c. oil
1/4 c. milk
1 t. vanilla
1 egg, beaten
3/4 c. sugar
1 1/2 c. flour
1 t. baking soda
1/2 t. salt
1 t. cinnamon
2 c. zucchini, grated
1 T. lemon juice
1/4 c. chocolate chips
1/4 c. walnuts or pecans (plus more to sprinkle on top)

Bake at 350 for 20-25 minutes.  Makes 1 dozen.

 {great counter space means room to make a mess}

 {HINT: they are even better the day after you bake them}
